coarsely chopped carrots
prepared no-salt-added vegetable broth
fresh ginger, chopped
green onion or chives, chopped
- Step 1
- Combine pineapple juice, carrots, broth, onion, ginger and salt in medium sauce pan and bring to boil.
- Step 2
- Reduce heat; simmer 20 minutes or until carrots are tender.
- Step 3
- Transfer soup to a food processor or blender, and cover; blend until smooth. Garnish with green onions or parsley, if desired.
