• 1-1/2 cups DOLE® Canned 100% Pineapple Juice
  • 3/4 lb coarsely chopped carrots
  • 2 cups prepared no-salt-added vegetable broth
  • 1/2 cup onion, chopped
  • 1/2 tsp fresh ginger, chopped
  • 1/2 tsp salt
  • 2 tbsp green onion or chives, chopped Optional


Step 1
Combine pineapple juice, carrots, broth, onion, ginger and salt in medium sauce pan and bring to boil.
Step 2
Reduce heat; simmer 20 minutes or until carrots are tender.
Step 3
Transfer soup to a food processor or blender, and cover; blend until smooth. Garnish with green onions or parsley, if desired.
