Ingredients

  • 1/4 cup DOLE® Canned 100% Pineapple Juice
  • 1/4 cup olive oil
  • 1 tsp garlic, minced
  • 1/2 tsp ginger ground
  • salt and pepper, to taste
  • 1 pkg (4.5 oz.) baby kale and greens
  • 2 ripe firm pears, halved, cored and sliced
  • 1/2 cup DOLE® Red Onion, thinly sliced
  • 1/4 cup dried cranberries
  • 1/4 cup pistachios, chopped

Directions

Step 1
Whisk together pineapple juice, olive oil, garlic, and ginger in small bowl. Add salt and pepper to taste.
Step 2
Combine salad blend, pears, red onion, cranberries and pistachios in large bowl.
Step 3
Pour juice dressing over salad mixture; toss to evenly coat.
