Ingredients

  • 1/2 cup DOLE® Canned 100% Pineapple Juice
  • 2 tbsp fresh lemon juice
  • 2 tbsp white rum
  • 1/4 tsp sugar
  • 1 tbsp Dijon mustard
  • 6 tbsp olive oil
  • salt and pepper, to taste

Directions

Step 1
Combine pineapple juice, lemon juice, vinegar, sugar, and mustard in a small bowl.
Step 2
While whisking, slowly add the olive oil until the vinaigrette is emulsified.
Step 3
Refrigerate until ready to use. Serve with green salad.
