DOLE® Canned 100% Pineapple Juice
honey or agave
old fashioned rolled oats
unsweetened coconut flakes
sliced almonds (toasted)
dried pineapple, chopped into bite-size pieces
Preheat oven to 325° degrees and line a baking sheet with parchment paper.
In a small saucepan, bring the pineapple juice to a boil; cook until reduced to 1/2 cup. Remove from heat and stir in honey and vanilla.
Combine the oats, coconut flakes, chia seeds, and almonds in a large bowl. Slowly pour juice mixture over oat mixture, tossing to coat.
Spread oat mixture evenly onto the baking sheet. Bake at 325° for 40 minutes or until golden, stirring occasionally. Cool slightly, stir in blueberries and pineapple. Cool completely, and store in an airtight container.
